Lance has Coeliac Disease.
I know it. He knows it. The doctors’ know it.
The bloodwork shows everytime that he is ‘borderline.’ He has a Gastroscopy coming up in late November to actually prove it.
I did an experiment the other evening. I made a pasta bake made out of Corn and Rice Pasta-totally Gluten and Wheat Free, and a Gluten Free Chocolate Pudding.
Instead of Lance’s 2 mouthfuls-and -”I’m-sooooo-full”routine, he sat in silence and ate three quarters of his pasta, and all of his chocolate pudding! ( Of course.)
My Mum scooped my up a couple of gluten free ingredients from a supermarket, which has a sensational aisle FULL of gluten free products.
A lady at our NDSS Pharmacy also gave me some literature on Coeliac Disease-I pretty much know the ins and outs of the condition- however, knowledge is power, so I gladly took it, and added it to my already over-soaked auto-immune riddled brain cells.
In this photo is the beginning of my collection of Gluten Free Ingredients.
Diabetes comes with perks. Already, we have experienced thrush, ringworm, patches of dry skin, gum infections that will result in thousands of dollars in dental surgery, a relfux condition, and now, a very high possibility of having Coeliac Disease too. It just makes a very difficult diet (especially for a child) almost impossible. I have met people with Retinopathy, with absesses on their legs that will not heal, with allergies to almost anything and everything- all accompanied or introduced by Diabetes.
Diabetes is not a punishment for overweight people, for folk that have a sweet tooth or people who succumb to frequent alcohol binges. It is a very harsh lifestyle that demands self-control and determination. If you fight it and ignore it, it will fight harder, and leave you crippled or gasping for breath.
Insulin is not a cure.
